It should occur once, categories that do not appear in the top navigation, this may simply be because, that too many categories available for the strip and thus simply no more room.
In case you are making a long debugging, Just once e.g.. with Firebug, the font size or the distance (padding) looking to change the categories and if not suddenly turns up missing, the category.
We had the problem solved by the way, in the CSS, the distance was reduced.
A little tip, to look, whether it is because: Just once, the order of the categories in the backend change. E.g.. not indicated category move to the top. Then immersed in the rearmost and disappears, It lies on o.g. Platzproblem.

What is the path to the CSS file, may change in the distance from the navigation button on the word start and end ?

It is up to the Theme. Often it is the styles.css skin in the folder / frontend /[base or default]/[IhrTemplate]/css. The best view in Firefox with Firebug. So it is easiest.
